1. 1/2 kg large potatoes, King Edward, Maris Piper, Desirée, Yukon Gold
6 tbs vegetble oil
1 tbs medium ground semolina
salt
Preheat the oven to 190° C. Place a large sturdy roasting tray into the oven with the oil.
Peel the potatoes and cut each potato into 3 triangular pieces.
Put the potatoes into a saucepan of cold salted water, bring to the boil. Cook for 5-8 mins. Drain
and put them back into the saucepan and over a gently heat dry them for a few seconds.
With a fork make marks all over each side. Toss them in the semolina.
When the oil is sizzling hot add the potatoes, turning until they are all coated with the oil.
Roast for 15 -20 mins and then turn the potatoes over. Continue to roast for anothr 20 - 25 mins
until golden brown.
