Vegan Courgette Crostini

A recipe from a cookery demonstration I attended, given by the Cordon Vert cookery school. Basic, and very quick, but it was really light and fresh-tasting.

Ingredients:
1 courgette, raw
3 spring onions
Fresh mint leaves
1 apple (they used Braeburn)
1 baguette
Fresh garlic

Method:
Grate the courgette. Place under kitchen towel and gently squeeze out excess moisture.
Chop ends off spring onions, chop finely
Chop mint leaves finely.
Put courgette, spring onions and mint in bowl and mix together.
Grate the apple, add to the bowl, and mix in.
Slice and lightly toast the baguette.
Peel a clove of garlic, then rub it across each slice of toast a couple of times.
Spoon mixture onto toasted baguette and serve.
 
Just a gentle reminder that courgette is what us 'Murricans call zucchini. :D
