Waffles Vegan recipe
Makes 4 or waffles in an 8 inch round waffle iron
You may need to add more almond milk the next day, as it thickens
Make one waffle a day for a meal for one person
Make sure your waffle iron is prepared for baking. If it’s new, or you don’t know, you’ll need to look online on how to prepare your waffle iron. I remember when I was first married, we got a wedding present of a large waffle iron. I didn’t season it, and the first waffle stuck so bad I threw the whole thing in the garbage. Bad me. (But I was determined to make waffles! So I kept working on my skills, and became a waffle expert!)
You will need a timer.
Prepare: pour some olive oil onto your waffle iron, use a pastry brush to spread it on the top and bottom griddles. l
Ingredients
- 2 cups flour (I use a 1:1 combination of Bob’s Red Mill whole wheat four and all-purpose flour. They don’t make WW pastry flour anymore)
- 3 tsp baking powder
- 1-1/2 cups milk of choice (Oat milk, almond milk, but not coconut milk)
- 2 tsp white or cider vinegar
- 10 tbsp olive oil
Serve with unsweetened applesauce or thawed frozen berries, etc
Put milk and vinegar in a cup for five minutes to make buttermilk. (Coconut milk will not work to make buttermilk.)
Mix flour and baking powder in 2 quart mixing bowl and mix together
Mix all wet ingredients in a 1 quart mixing bowl.
- Make a hole in the dry ingredients; pour in the wet ingredients, stir, but still somewhat lumpy. Do not over-stir
- Turn on waffle iron. Use brush to oil the griddles again. Make sure there is plenty of oil.
- When the red light on the griddle turns to green light, pour the batter into the middle of the griddle, leaving some room on the edges so it does not overflow.
6.Set timer for 3 to 4 MINUTES
