Whatcha Eatin?

I've been having overnight oats, without realizing that's what they're called! All summer, I've been letting my breakfast oats soak instead of cooking them- but since I've been using quick-cooking oats, it doesn't take them nearly all night to soak up the liquid. I've been having something simple for my first meal of the day while I prepare the oats, and then have the oats about 2 hours later for a sort of brunch. It's just the thing for a summer morning meal after a warm night.

not sure as our water seems to be not functioning... hmmm - might have to eat the rest of the bread I made yesterday lol

fortunately the water came back on and I had a delicious noodley soup with cabbage and kale, soy curls and all the other goodies

today - either a small bowl of cereal or rolled oats in the microwave

I had a plant based hot dog and fries at the cinema today. I just had snacky things when I got home, crackers, vegan cheddar, gherkins and then some vegan chocolate.

I think I will be having an Aylmer veggie soup with lots of additions to it including cabbage, either beans or soy curls and lots of other veggies.

instead I had the leftover curry from the night before and added a can of chick peas and some frozen kale to it...

today is back to the usual Saturday fare - steel cut oats/split red lentils with lots of berries

It's raw/rainy out. I went to the Asian grocery store for a few things, including some veggie ramen noodles. I got stuck in a downpour, lol. Going to have some ramen noodle soup and crackers for lunch.

I treated myself to some artisan vegan cheese from Divine Treasures, a chevre-style herbed cheese. It's quite tasty, and I'm having it on water crackers.

I've been buying sprouted rolled oats for so long I didn't realize how different they are from just rolled oats! I could cook the sprouted oats for 6 min and they'd still have shape, reg only take like 1-2 min! I may like them 'overnight' That would be convenient!

Emma's got me wanting soup now! I've barely eaten today and hungry, but can't come up with what to have (besides junk food :fp: )
