I love overnight oats, and perhaps I will make some today for tomorrow.

I've been having overnight oats, without realizing that's what they're called! All summer, I've been letting my breakfast oats soak instead of cooking them- but since I've been using quick-cooking oats, it doesn't take them nearly all night to soak up the liquid. I've been having something simple for my first meal of the day while I prepare the oats, and then have the oats about 2 hours later for a sort of brunch. It's just the thing for a summer morning meal after a warm night.

A whole wheat wrap with smoked tofu, roast red pepper, sliced avocado and Tajin.
A cracked pepper oatcake with a wedge of Applewood.

A couple of small ww wraps with Philadelphia cream cheeze, crispy onions, smoked tofu, avocado plus Tajin.

fortunately the water came back on and I had a delicious noodley soup with cabbage and kale, soy curls and all the other goodies

today - either a small bowl of cereal or rolled oats in the microwave

I had a plant based hot dog and fries at the cinema today. I just had snacky things when I got home, crackers, vegan cheddar, gherkins and then some vegan chocolate.

A banana for breakfast and most probably a whole wheat wrap for lunch.

I had a banana and then two toasted crumpets with Flora when I got home.

I think I will be having an Aylmer veggie soup with lots of additions to it including cabbage, either beans or soy curls and lots of other veggies.
