Whatcha Eatin?

I had some Applewood vegan cheese with crackers. I'm going to make Quorn pieces again with basmati rice and veggies for an early dinner as my class starts at 6.30 this evening.
 
just finished a very satisfying breakfast beans with added cumin, garlic powder, paprika, cayenne - leftover boiled potatoes with sauted onions and chunks of bell pepper - 1/2 piece bread toasted with miso - bagel toasted - 1/2 large orange cut into pieces

I am going to make the shredded tofu recipe I keep seeing everywhere online recently. I need to buy salad today as I have totally run out and I am going to stuff it all in a toasted pitta bread. :)

My favourite hard vegan cheeze.

A slaw; white cabbage, carrots, mushrooms, smoked tofu, Dijon vinaigrette and yeast flakes.

A banana.
 
Savoy cabbage, lemon & white bean soup made in the IP served with extra fresh lemon zest, a sprinkle of yeast flakes, grated
Violife Prosociano cheeze plus a drizzle of evo.

Vemondo high protein chocolate & hazelnut pudding which I vamped up with extra ground hazelnuts, sweetener and soya cream.
I wouldn't recommend buying this product as it doesn't taste very good. Such a shame as it gives vegan food a bad reputation.

I'm having toast with vegan butter and Vegemite spread.

I'm batch cooking some spaghetti and peas with sun dried tomato pesto for my lunch today and tomorrow.

I went into a new health food shop/cafe in Leigh-on-sea yesterday called Frey. I bought some orange electrolyte water and a dark chocolate and raspberry cookie. It isn't all vegan, but most of it is. :heart_eyes:

we have some leftovers from last night so I may make a small bowl of oatmeal (small is a relative term as my oatmeal bowls are normally huge) and have the leftovers as well

I had overnight oats for breakfast (made with almond milk, raisins and walnuts), and I just finished a soy curls chik'n salad wrap with a dill pickle and an orange. I put a little pesto on the sandwich.

I had some leftover cannellini beans that I sautéed with onion and garlic and I added them to elbow pasta with nutritional yeast and panacheeza parmesan. It was amazing. I have to make that more often.
