Whatcha Eatin?

I think we are going to have our usual Saturday morning steel cut oats, berries, banana, toast.

not that anyone cares LOL - we did not have this ^^^ we had the leftover smeat from our tacos mixed in with our can of breakfast beans - toast on the side - berries/banana on the side

today I had to work for 5 hours straight and so no steel cut yet again, instead, I just had 2 tofu burgers plain, a banana/berry/pb powder/cocoa powder smoothie, split with my honey

I have not tried making tofu burgers. I think I might, though, just for another option. I'm just having crackers at the moment. I've been sick all weekend, so my stomach is a bit tender.

I'm going to make a green smoothie for breakfast and then make a lunch/dinner of Juicy marbles "steaks", roast potatoes and a salad. I hope my husband can find a vegan salad dressing at Aldi.
All the vegan items in the UK and not salad dressing? :shrug:
I get Balsamic or poppyseed, both vegan and no corn syrups. They also have regular Italian and oil/vinegar types. Pretty sure their French is vegan
Man could I use a salad!

I've been nibbling on the seitan I just shredded.

I did just order salad dressing from an online supermarket called Ocado. It is the vegan version of a restaurant dressing - Pizza Express. It tastes almost exactly like the non vegan one from the restaurant, as I remember.

Lots of people in the UK make their own salad dressing.

I had leftover green lentil & vegetable soup with a slice of artisan multi seed bread plus Flora.

I stopped buying bottled dressing ages ago, as I just like the taste of homemade better. On occasion, I'll get a packet of Good Seasons dressing, which is just all the herbs and spices that go into, say, Italian dressing, and you just add oil and vinegar to it. It also calls for water, but i don't add the water.

ETA: I'm having a couple of cookies, molasses crinkles, with my chai tea.
 
The tofu burgers that I was eating are made by a company in Quebec (Soyarie) and are available only in Quebec and Ontario, that I can see. I really like them and they have tofu itself also, of course.

@silva and @PTree15 and I was laughing at myself as I sometimes feel like I use this as a food diary and so I have to correct it if I don't eat what I said I was going to... thank you for caring ☺️

I am definitely going to have/make our steel cut oats today - so not usual for a Monday but I can't not have them for the week, so lots of berries and banana and all the fixin's coming up.

Ah, OK. I might have to look for a recipe for tofu burgers. I'm sure there are plenty out there.

there are and a lot of recipes for seitan that involve tofu - watched a youtube video about someone making a faux ham and our Christmas turkey was a tofu seitan so I think just making them burger shaped could work or, as you said, there are lots of recipes out there

after all tht discussion - I had cereal with berries, banana, walnuts, pumpkin seeds etc yesterday and today? .... I will report tomorrow so I don't make a liar out of myself - either steel cut or noodley soup

so... yesterday I did not have noodley soup for lunch... instead we had a leftover lunch - in the frying pan I sauted an onion, added 1/2 can of kidney beans from the fridge, leftover boiled potatoes and then the leftover fusili pasta... it was delicious

today will also be leftovers of steel cut oats/split red lentils from Tuesday with added berries and banana

I made a really nice dish with lentils, meatless crumbles and taco seasoning. I topped with Daiya cheddar shreds and it with baked Tostitos. The only thing missing was Tofutti better than sour cream. I still have some so I will add the sour cream when I have more of it tomorrow.
