Whatcha Eatin?

I bought a new toastie maker so I am waiting for the bread to arrive in my groceries delivery. I'm going to have a toastie with vegan cheese, tomatoes and sundried tomato pesto.😋

I made Miyokos copycat just egg. She blends the moong dal in water and then strains them with a nut bag and just uses the juice, Her recipe adds konjac powder, which I didn't have, but looked up a sub and suggested corn or tapioca starch, so I added a pinch of cornstarch-not as much as the konjac though. It came out soooo gummy! Exactly what I was hoping to avoid. I don't remember the recipes that didn't strain out the solids, but this didn't seem any better--and a TON of mess :down:. Like a really thick roux.
If you like the usual copycat recipes I'd suggest leaving well enough alone! :yes:
The leftover remnants of lentils are just like play dough. I don't know what to do with them. She suggested fritters, or bread, but I'm hesitant

Now making granola, which I can depend on
 
That didn't really fill me up so I made a salad with sweetcorn, celery and cannellini beans as I didn't have any chickpeas. I had it with mustard, vegan mayo, vinegar, sea salt and white pepper on sourdough.
 
Breakfast was a warm Greggs sausage roll at 4.45 am. Lunch was a sandwich made with brown multi seed bread, Flora, mashed avocado and smoked tofu.
I had a Sainsbury's raspberry jam doughnut as a snack during the course of the afternoon.
