Whatcha Eatin?

I had a Mexican rice and avocado pot. It wasn't all that nice and I thought how easy it would be to make from scratch. I also had a bowl of honeydew melon and a natural energy drink.
 
I decided to copy Silva and make a tofu "egg" salad. I made mine with extra firm tofu, celery, mustard, mayo, veggie bouillon powder, white pepper and turmeric. I had it in a warm pitta bread. A bowl of strawberries too.
 
bagels... that is a great idea, thank you - I am tempted to make pancakes however too lazy and we have bagels and Just Egg patties so that is what I will make along with some fruit

edit: have some leftover boiled potatoes and pinto beans so decided to add a 'hash' to the above - onion, jalapeno, bell pepper, potatoes, pinto beans

Hang in there! Lately, my craving for sweet things has been acting up. I have a calendar on my wall where I list things such as appointments (which I have always had trouble remembering). I also make notes of when I gave in to cravings. I don't obsess about it, but given that I have a known risk for Type 2 Diabetes, I think it's a good thing that I keep aware of my diet. I'm no longer pre-diabetic- and intend to stay that way.

It's odd because usually I'm like this over the winter months and by spring time, I'm back on track. But for some reason I've been extra hungry the last 7-10 days. I think it's because I'm more active again. I seem to do better and not overeat when I'm less active. I know it should balance out...but it's not working that way. I'm going over on the calories in vs calories out. 😞
