Whatcha Eatin?

I made cookies with the same recipe I always use, but never follow. This time I followed it, and they're kinda greasy and too sweet :confused:
I was so wrong about those cookies, and I think I say the same thing everytime I make them! My sons loved them, I think I overreacted because they left grease stains on the parchment. I do think I could cut back on oil and sugar.
It's the recipe I often use-I do find they need more time, and I wait to flatten halfway through baking
 
I'm having a Reuben made with the last of the vegan corned beef experiment. It was actually pretty tasty. I made a quick Thousand Island-type dressing and added sauerkraut and vegan cheese from Aldi, then I grilled it like grilled cheese with vegan butter on the bread. I'm going to find a better recipe for the vegan corned beef, or spice up the recipe I have differently. The texture of the seitan was great, so I just need different spices or a different recipe. :) I had some tortilla chips as well.
 
I'm having overnight oats made with almond milk, peanut butter, blueberries and a dash of maple syrup.

oats for me too - still deciding between rolled and steel cut as it has been awhile since I had either - steel cut I think... yeah, some split red lentils, berries, date, hemp etc

I'm going to make a green smoothie as I saw a vegan making one on YT yesterday. She put in broccoli which I have never done! I have apple, banana, lemon, celery and spinach. I will add pineapple if it is bitter.
