Vegan Spicy Fruit and Nut Biscuits

014.JPG These are AMAZING...they have a small amount of apricot jam in them and the spicy flavours of all spice and cloves. Try them out and let me know what you think!

Ingredients
  1. 3/4 C peanut butter
  2. 1/2 c vegan margarine
  3. 1/2 c brown sugar
  4. egg replace to equal 1 egg
  5. 3 TBS apricot jam
  6. 1 tsp allspice
  7. 1 tsp cloves
  8. 1/2 tsp salt
  9. 1 1/2 C of flour ( I used GF self raising, if using plain flour add 1 tsp baking powder)
  10. water on hand to thin if needed
Instructions
  1. Preheat the oven to 175 c.
  2. Using an electric mixer cream the peanut butter and margarine for at least 2 minutes scraping the sides as you go.
  3. Add sugar and continue to cream for at least another minute and scrape again.
  4. Add egg substitute and mix again until incorporated.
  5. Scrape down the bowl and add the jam. Mix well.
  6. In a separate bowl mix together the flour, all spice, cloves and salt
  7. Incorporate the wet mixture into the dry and mix well with a wooden spoon.
  8. The biscuits need to be rolled into balls so if the mix is to thick thin it out with the water.
  9. Roll into balls, place on a greased cookie sheet and place in the oven for 15 minutes or until brown on the bottom.
  10. Please be aware these bickies need to be handled carefully when hot and then allowed to cool when out of the oven.
