I put some black beans in water to soak, and the skins started coming off right away. Also many of the beans were splitting.

Does this mean the beans are old?

In my own experience with black beans, when you soak them too long they'll do this. They shouldn't soak longer than 6 hours. Also, if the beans get really old, it is pretty much impossible to soak to where you got them. They peel less if they're old.

Mine split open all the time. I usually let them soak for eight hours or more.

I have heard that. But, in my case, the skins came off right away. The beans were not even in the water a few seconds.

No idea. I've never seen that in my own experience with black beans. Do you buy quality organic beans?
