Vegan Simple Vegan Chili

A solid one pot meal.

1 -2 medium onions
1-5 cloves of garlic
1 green pepper
2 - 12oz cans of kidney beans
1 - 24oz can of Hunts tomato sauce
1 - 8oz can of Hunts tomato paste
1/4 to 1/2 cup TVP (or another type of vegan crumbly "meat")
Chili Powder to taste
1/2 - 1 tsp cumin
1/2 - 1 tsp coriander
1/4 - 1/2 tsp oregano

Chop up the onions and garlic into small pieces. In the meantime, heat olive oil in a no stick pot. When the oil starts to crackle toss in the garlic and half the chili powder. Stir fry until the garlic is aromatic. Toss in the onions and more chili powder. Stir fry until onions are beginning to get soft. Toss in the green peppers, and cook a few minutes until green peppers start to get soft.

Add the TVP, and stir fry for minute or two.

Toss in the other spices, stir a couple of times then add the beans, sauce and paste. Stir thoroughly. Add more chili powder and the other spices to taste. Allow to cook until all of the chili is thoroughly hot.

Serve.

Sounds good...I have yet to make a good chili. :( Maybe I'll have luck with this recipe! :)
