I like this concoction because it's a one-bowl wonder: fruits, veggies, protein, and fat all in one place! It travels well and taste great too.

Makes about one serving.
  • 1 cup cooked quinoa (preferably made a few hours before and chilled)
  • 2/3 cup cooked chickpeas (or canned and rinsed)
  • 2 Tablespoons sliced almonds
  • 3 Tablespoons craisins (dried cranberries)
  • 2 Tablespoons raspberry vinaigrette dressing
  • handful of shredded carrots
Mix all ingredients together, chill and serve! Makes a great lunch or quick dinner.
