Vegan Mushroom chowder

No real measurements. Makes about 4 quarts?

1 pound mushrooms (I use white or baby bellas) chopped in bite size chunks
4 carrots chopped
about a cup chopped celery
medium chopped onion
2 medium potatoes diced
1/2 bag frozen corn
Simmer in about 5 cups water while prepping creamy base--

2 cups cooked white beans
1 cup soaked raw cashews
seasonings I like-sage, rosemary, thyme, ground coriander- about 1 tsp each
Blend with 1 cup water and 1 cup non dairy milk til smooth

Mix the creamy base into the cooked veggies.

Next time I make this I'll try and get measurements. I just go by the looks of my cooking pot
 
That sounds like a proper winter warmer, that does.

I love a mushroom chowder, and using blended white beans and cashews for creaminess is such a great trick. I usually do something similar, but I add a splash of white wine at the start.

Finding raw cashews in bulk can be a pain where I am. So I recently ordered a bag of Sainsbury's cashew kernels from McGrocer. They're pure raw ones, perfect for soaking and blending. Worked a treat.
