Whatcha Eatin?

@ewomack @Emma JC We're all eating legumes! This past weekend, I soaked, rinsed, and cooked a batch of dark red kidney beans- big ones, I thought- in my slow cooker. I was certain to make sure they were fully cooked after reading an article within the past year that said kidney beans can make you sick if they're raw or undercooked. No spices at all. I was a little surprised at how much I like them, although they can't hold a candle to soybeans, garbanzo beans, or peanuts.

Yes please be careful! With kidney and soy beans it isn't just to cook them fully, but to have them at a very high temp for at least 10 min to kill that enzyme
I've never liked slow cookers, which don't all get that high
Never cook raw, dry kidney beans directly in a slow cooker without boiling them first, because slow cookers do not reach a high enough temperature to destroy a natural toxin called phytohaemagglutinin (kidney bean lectin). Eating undercooked or raw kidney beans can cause severe illness, vomiting, and extreme digestive distress

Kidney beans are one of my favorites. I should make that marinated three bean salad, kidneys, chickpeas, and green beans

It's funny that I always write chickpeas, but I say garbanzos. I grew up with garbanzos

My slow cooker is quite old, but I take good care of it. I finished the kidney beans I cooked in it, with no issues. I vaguely remember reading something to the effect that newer slow-cookers don't get as hot as the older ones do. I checked it while the beans were cooking, and the water was bubbling slightly; I assume that it did reach 100 degrees C, if only barely. I kept them on for quite some time, and let them sit in the cooker (covered) until they cooled off.
