A bowl of leek & cauliflower soup with a sprinkle of spices/pepper and a drizzle of evo.
A slice of toasted ww sourdough bread with mayonnaise ( I had a tbs leftover) plus some
thinly sliced seitan.
A tiny apple for later on.

today is leftover steel cut oats/split red lentils from Saturday - adding berries, banana, walnuts, pumpkins seeds etc

@shyvas Vegetarian butcher chicken chunks! Other add ins are avocado, bagel seasoning, cucumber, nutritional yeast, and Violife halloumi. I start with spinach, lettuce, and grated carrot 90% of the time I make salad

likely a very simple noodle dish today as we may have more bean/veggie soup for dinner - have some leftover pasta from Saturday night so will incorporate the two together

Vegan/gf Anniversary buckwheat pancakes from the shoreline diner...married 52 years yesterday.

I drove by the exit to the Shoreline Diner on my way to visit my mom at the hospital, and I soooo wanted to stop and eat there, but I didn't have time, lol. The sign for the diner on the highway even says "vegetarian enclave."

I'm not eating anything at the moment, but I plan on having a Beyond burger for lunch.
