Whatcha Eatin?

A bowl of leek & cauliflower soup with a sprinkle of spices/pepper and a drizzle of evo.
A slice of toasted ww sourdough bread with mayonnaise ( I had a tbs leftover) plus some
thinly sliced seitan.
A tiny apple for later on.
 
Vegan/gf Anniversary buckwheat pancakes from the shoreline diner...married 52 years yesterday.
I drove by the exit to the Shoreline Diner on my way to visit my mom at the hospital, and I soooo wanted to stop and eat there, but I didn't have time, lol. The sign for the diner on the highway even says "vegetarian enclave." :)

I'm not eating anything at the moment, but I plan on having a Beyond burger for lunch.
 
Last night's leftovers as it's very chilly. The weather forecast says that it feels like it's -1°C.

Wow, that looks delicious!

I'm having overnight oats made with chia seeds, plain unsweetened vegan yogurt, soy milk, cinnamon, maple syrup, raspberries and walnuts. My sis gave me the recipe, and I am loving it. I'm incorporating more vegan yogurt into my diet. I wasn't much of a fan of the dairy version, but I seem to like it for everything from sauces and dressings to smoothies and things like overnight oats.
