Whatcha Eatin?

I'm going to try Plant-Based Bistro's chickpea flour egg/omelet in a bit. As for right now, I'm having a couple of sugar cookies with my coffee. :)

likely our usual steel cut oats, however, we wish to go to the gold/silver store so maybe just toast

yah, we didn't have anything until after going to the store - it was in a location close to a plant-based fast food eatery so we went there - had burger and it was just 'okay' - not great, not bad, just okay and it was a bit of a shock, the cost to eat there... $40 some dollars - so crazy and makes me so glad that we eat at home, most of the time

today we will have our Saturday steel cut oats and maybe have our Sunday 'beans on toast' tonight for supper

I'm having Plant-Based Bistro's chickpea flour "egg" omelet, with roasted potatoes, an orange and some orange juice. I'm not thrilled with the texture of the mixture, as it's quite goopy, but the flavor is quite good. I did add some baking powder to it, as the recipe didn't call for any, but I wanted a bit more cake in the omelet. I have to figure out how to make it solidify better. I always preferred scrambled eggs/omelets that were drier than most people like them.

While I love my mung bean egg mixture, it requires soaking the beans overnight; this recipe is quick and makes one or two servings. I think it would work better as a scramble.

A bowl of pureed spicy (not piquant) butternut squash soup with a few crispy onions, a sprinkle of smoked paprika, yeast flakes and a drizzle of soya cream.

A spelt/multi seed cracker with Boursin cream cheeze.

Skyr soya yogurt with pureed mango. This is the first time that I've tasted plant based skyr and it was fabulous.

I make potato or sweet potato tortilla using chickpea flour. However I bake it in the air fryer. It comes out more like a pancake but tastes good.

I had a very healthy breakfast of a crisp/potato chip sandwich with a cup of tea.🤣
Do you put anything on the crisps sandwich? I used to put mustard on mine. :laughing:

I am having oatmeal with raisins and walnuts with a sprinkle of brown sugar.

Yum! I have made a pancake-like omelet with chickpea flour in the past. It was pretty good, but I now prefer the mung bean mixture for omelets. That said, I have enjoyed the chickpea flour "egg," and I will tinker with the recipe to get a better texture because the flavor was very good.

Sojasun is the brand that I prefer for soya yogurt… I haven’t seen Skyr here in Ireland yet though

I've never had mung bean food so can't compare. However, I find that anything made with chickpea flour is more like a pancake and not an omlette.

I saw that brand somewhere 🧐 I think Brighton. I have heard that it is nice.👍
