Whatcha Eatin?

I went out to breakfast with my anxiety friends this morning and they had oatmeal on the menu with an option of having it made with water or milk so of course I chose the water. I brought my own little pat of Miyoko's butter, a splash of soy creamer, and some unsweetened granola that I found at Food Works. A couple of dried cranberries and it was a really satisfying breakfast.

Obviously I added a little brown sugar lol.
 
I had toast with Flora butter and Vegemite. I had my chocolate from my advent calendar too. I have some defrosted cherries so I was going to make a chocolate smoothie.

I'm having a plant based lasagne for lunch or dinner that I haven't tried before.
 
Toast and bean "hummus" with "small white beans"

Quite often I just grab a pack (can or whatever) of white beans, lentils, sometimes even chick-peas! :)
Throw into a blender. Add salt, pepper, and tahini. Maybe a little fresh garlic. Add olive oil and blitz.

Keeps in the fridge for 5-6 days and I use it on toast in a morning :)
Yummy.
 
Good morning! Today my sister is cooking and she usually makes a salad, legumes with mushrooms, and seitan with a bit of spice, and maybe some fruit like persimmon for dessert
I saw persimmons yesterday and thought I haven't had them in ages. I might go back and buy some tomorrow.

I mixed cranberry sauce in my oatmeat, very good

my Saturday steel cut oats always have cranberries added in while cooking - love them

today will be noodle soup again with kale, soy curls etc - on Monday I added about a 1/4 cup of split red lentils and I really liked the result

I was in Ikea as I had to pick up some storage bags, so I had a vegetable hot dog with mustard, crispy onions and red cabbage. It makes quite a good snack for only 1€.
When I got home, I had some red cabbage slaw with Dijon vinaigrette plus yeast flakes and a banana for dessert.
