Whatcha Eatin?

we had our usual Saturday fare, steel cut oats/split red lentils with molasses, cranberries, blue/black/rasp/strawberries, banana, ground flax, hemp hearts, turmeric, raw pumpkin seeds, walnuts, cinnamon, maple syrup and toast with peanut butter - lots leftover for Tuesday

I'm having banana-almond butter ice cream with crumbled Thin Mints on top. This was really tasty! I think it's my new favorite way to eat Thin Mints. :D

A salad; batavia, parsley, diced peeled cucumber, roast red peppers, smoked tofu plus chia seeds, vinaigrette and yeast flakes.

Alpro soya yogurt with a few drops of vanilla plus a drizzle of apple puree. A slice of lemon drizzle cake.
 
I made sourdough bread three days in a row...two regular and one cinnamon swirl. I made a large batch of french toast...enough for husband and I to have a couple slices for a few days. It warms up so well in the air fryer.

Then I bought a couple of tomatoes. They're not good at all, still hothouse grown 🤢 but with lots of Vegenaise and vegan parm on sourdough bread, it made for a mighty tasty sandwich. That was breakfast this morning.

Leftovers; I made a salad with the leftover quinoa and veg and added chia seeds, vinaigrette and yeast flakes.
Leftover aubergine & courgette compote served at room temperature with added yeast flakes and smoked Cornish sea salt, as it's very hot over here.
An orange.
