Whatcha Eatin?

An artichoke with vinaigrette.
The same salad as the one I made yesterday minus the red cabbage. I added fresh herbs (parsley, chives & basil)and vinaigrette plus yeast flakes.

Mashed strawberries and soya yogurt.

Small plates; leftover Spanish bean stew. A whole wheat Applewood & Flora sandwich.
A cucumber salad with vinaigrette and yeast flakes.
Mashed strawberries with Sojade yogurt plus sweetener.
I love small plates! The combinations are endless.

I'm not eating anything yet, but I plan to make some tempeh bacon and have it with the last of the mung bean just egg, in either a wrap or on toast.

as it is a holiday here I am considering making my Lemony Berry Pancake Bars however my pancake mix is out of date (by 7 months) and so I may not make it as I am just toooo lazy to make it from scratch.... hmmm maybe I should try

btw we did not have the Just Egg and tempeh bacon with brunch yesterday, saved it for dinner

edit: I got off the couch and made the Bars from scratch - used over a cup of rolled oats, the first cup I ground up a bit, added oat milk, maple syrup, chia egg, lemon juice, vanilla, apple sauce and then added it to a cup of flour, baking powder, cinnamon -2 cups of berries - now in the oven

it has been very coldish the last few days so I am definitely feeling like having my noodley veggie soup, even tho' I don't normally eat it on a Tuesday LOL - so lots of kale, cabbage, spinach, brussel sprouts, soy curls etc is on the menu

A chocolate chip scone. I made them for our game of dominoes tomorrow, but I needed to test them because the Earth Balance buttery sticks were finally back on the shelves -- and they are made differently now, and they are packaged more like dairy butter in that the sticks now are longer and more narrow. So I needed to try the scones to make sure nothing funky was going on with the butter. :D (yes, I could have had just a bite, but after that, I was like, well, I should finish it, haha).

EB's sticks had been stubbier. I hadn't been able to find them for weeks, and I suspect it was because they wanted to roll out the new version. From what I can tell, there is no soy protein in it; that has been replaced by pea protein. I had read that people weren't happy with the new version, complaining of weird aftertastes and problems using it in baking, which is what I primarily use the EB buttery sticks for. I may try the Country Crock plant butter with avocado oil, but I'm wondering if that oil has a big avocado flavor. If so, I won't try it for baking.
 
very busy today so I just put one of the Aylmer Vegetables soups on the coil and added a few frozen veggies and soy curl crumbs and then some croutons when eating - it has alphabet pasta in it so makes me think of childhood
