Whatcha Eatin?

I have seen numerous articles that say rice, potatoes, pasta...when chilled then reheated...have a lower glycemic index.

JO style whole wheat linguine made in a rich wine bol sauce with added mushrooms and spinach topped
with a sprinkle of yeast flakes, grated smoked Cathedral City and a drizzle of evo. Last night's leftovers made in the IP.

I had one of the Dinnerly meals called Veggie Drunken Noodles. It is very good! I have decided to cancel Dinnerly at the end of this month. I have saved all the recipes and I can duplicate them and save the shipping costs! It will just mean I will have to plan my shopping a bit more.
 
today is leftover steel cut oats day and I think I may keep it very simple today (since 'someone' is razzing me about my fruit intake lol) and also have the leftover capellini from Saturday night - yum two meals in one... and maybe will open a can of lentils and put some of them in with the capellini

hmmm Wednesday, noodley soup day - yup I think I will - last of the fresh kale, some spinach, lots of frozen veggies, the delicious gochujang paste and miso paste for the base, soy curls with lemon juice, sriracha and tahini drizzled on top - now my mouth is watering

Two corn tortilla wraps with lettuce, cabbage, banana pepper rings and tofu feta. A sugar cookie for dessert.

@Tom L. I can understand your concerns however Type II is not caused by sugar it is caused by a build up of fat in the cells that blocks that ability of insulin to do its job - this is not just thoughts from our favourite plant-based doctors but is also from the NIH

so if your body mass index is normal I don't really think you have cause for concern.... as always check with a health practitioner and don't just listen to me.... and yes, I always eat steel cut or rolled oats, and you can always do like I do with the steel cut and make more than you need for one meal, put it in the fridge and reheat for the next time - rolled oats I just do in water in the microwave so that is also quick and easy.

I've heard that cooling and re-heating certain foods lowers their GI, too.

I suppose I might be worrying a bit too much, but about 4 years ago, I was found to be pre-diabetic, going by my HbA1c results. However- at the time, I was really giving in to cravings for sweet/sugary things. (The major supermarket chain where I do a lot of my shopping has a dangerously tempting in-house bakery). I definitely didn't go low-carb after that, but I did cut back on excess empty calories. My most recent A1c results would be considered high-normal, but have levelled off.
 
I heard the other day that if you cook pasta and then freeze it and then reheat that it is better for people with diabetes. A YouTuber (not vegan) said his diabetes nurse told him that.

I had toast with avocado and lettuce and a banana and a clementine. I made roasted chickpeas after so I had a bowl of them too.
 
yes, cooking, cooling and reheating starches makes them a resistant starch - "Resistant starch is a carbohydrate that resists digestion in the small intestine and ferments in the large intestine." ... so they function more like fibre

today I will eating my noodley soup again, quelle surprise... :joy: and I have a half a can of lentils in the fridge so I will be throwing those in as well.
