Whatcha Eatin?

Yesterdays tamale pie. I lifted the cornmeal crust to add the Aldi vegan cheddar shreds. I bought those specifically for the casserole-and forgot to add them under the cornbread topping :ignore:. Those are pretty good for things like this, I'm so surprised my store still carries them

I had a smoothie with blueberries, raspberries, banana and oat milk for breakfast and a ready made lentil lasagne for lunch.

very busy today so had just a w/w pita with peanut butter and jam and a banana wrapped up in it and then my honey gave me a handful of his kidney beans he made minestrone soup from and I ate those with a few leaves of kale and some halved cherry tomatoes - starting to get hungry again now

@Emma JC That sounds great!... and also healthy. I've been concerned about developing Type 2 Diabetes lately. I'm doing okay so far, but I've been educating myself about what foods have a high glycemic index, and cause a more severe blood sugar spike. It turns out that the unsweetened-but-quick-cooking oats I often eat have a higher glycemic index than I thought, while steel-cut oats or regular oats (both in moderation) are a much safer option for people like me.

@Tom L. I can understand your concerns however Type II is not caused by sugar it is caused by a build up of fat in the cells that blocks that ability of insulin to do its job - this is not just thoughts from our favourite plant-based doctors but is also from the NIH

so if your body mass index is normal I don't really think you have cause for concern.... as always check with a health practitioner and don't just listen to me.... and yes, I always eat steel cut or rolled oats, and you can always do like I do with the steel cut and make more than you need for one meal, put it in the fridge and reheat for the next time - rolled oats I just do in water in the microwave so that is also quick and easy.

Today we are having breakfast beans/onion/jalapeno on toast with lightly fried potatoes that I cooked a pot full of yesterday - cooled them outside and then in the fridge. They were starting to go off as I had a 10lb bag I picked up for $2 and so I figure this way I can make them last a bit longer. We will also have an orange/banana sliced.
