What Did You Cook or Bake today?

I made the depression… A.k.a. wacky… Chocolate cake. I added some chocolate chip chips and it came out really good. It's a storm snack lol.
Yum! Even though I'm tracking my calories, I'm jonesin' for some cake. I didn't make my usual chocolate peanut butter extravaganza for my (our :) ) birthday because I had that awful cold, plus my friend from Minnesota was here visiting and I had to prep for that. Hmm, I should put something in the oven now, lol. Oooo, maybe I will make gingerbread. I haven't had that in a while. Decisions, decisions.

I made date walnut cocoa balls yesterday that came out much firmer than usual. I used medjool dates that were never fridged so they were soft and gooey. I had been using Deglet that were fridged and just much dried than medjool so I soak those

I made the most amazing croutons out of a failed sourdough loaf of bread. I seasoned it with garlic and onion powder, nutritional yeast, Panacheeza vegan Parmesan and olive oil.
I've been wanting to do that as well as bread crumbs. I let an end piece dry out thinking I would make crumbs but it was hard as a rock
I do like dry bread shreds in salad, I it's like panzanella?

I cut the soft bread into cubes then air fried them. I'm not familiar with panzanella...I will look it up. Sounds good, bread shreds in salad.

made this today. I think it's called a Vegetable Bake. Subbed Just egg and plant based mozzarella.

INGREDIENTS


▪️2 sweet potatoes
▪️1 cup of chopped broccoli
▪️1/2 cup peas
▪️1/4 red onion, sliced
▪️3 eggs, whisked - seasoned with salt, pepper, chilli flakes (whatever you like)
▪️Handful of cheese. MOZZARELLA

METHOD

▪️Preheat oven to 355 Fahrenheit
▪️Cook your sweet potato until soft - microwave/roast/air fry
▪️In a prepared 9 inch dish, smash your sweet potato so it covers the base
▪️Add your veggies and pour over the egg. Sprinkle over the cheese
▪️Bake for 30-40 minutes until golden brown
