What Did You Cook or Bake today?

Finally! I have a weirdly fond memory of making what is called strawberry pretzel dessert. It's a pretzel base, layer of sweetened cream cheese, and then a layer of strawberry jello made with frozen strawberries to chill it quickly .
I had soy/cashew yogurt I made and strained till it was thick while making the pretzel crust. I melted half a stick of plant based butter in an 8x8 preheating the oven while crushing enough pretzels to make about 1.5 cups. Took out casserole dish and added them and a Tblp of sugar and mixed around. Pressed down really well and baked at 350 F for 10 min.
When cool I spread the yogurt and put in fridge.
I used a box of Gefen jel that has carageenan as jel, made with one cup of boiling water (instead of 2), and added a handful of frozen mixed berries. let sit in fridge till thick enough to spread on top.

So glad I got that out of my mind :weird: .There are many vegan versions, but I didn't like the sound of any of them.This was ok, won't make again

I had never heard of this dessert. I like the idea of a pretzel base for a crust, though, for other desserts.

I'm making some meals/desserts for my nephew's GF, who just had foot surgery: spaghetti sauce, veggie pot pie, buffalo soy curls, hummus, chocolate chip scones and banana bread. :) It will be a miracle if I get this all done tonight, lol. The sauce is already cooking, and I just made the crust for the pot pie. I might save making the banana bread for tomorrow morning. The scones don't take long to bake, maybe 15 minutes.
 
Buffalo soy curls, hummus, banana-peanut butter ice cream and some rice for a pineapple veggie stir-fry for later. I might make some pumpkin muffins later.

If you blend dates with peanut butter it comes up like caramel, even has that caramel kind of taste. I've never seen a recipe using dates as sweetener, but thinking about this, I need to try

I'm not good either. I always seem to have trouble.

OK, the other one appears to be locked now, so this must be the official one :)

I was going to make scones this morning, but I am out of vegan butter. I still want to make them, so a trip to the store will be in order. I'm also going to make veggie pot pie.
 
I am going to have to start making a lot of things as today was 'harvest' day at the grocery store and all the ten pound bags were just $3 - potatoes, onions, carrots and beets.

I currently have a 'roasted veggie' pan in the oven with all of the above plus a parsnip and a turnip. I did not buy the bag of beets as I am not sure I can trust myself to use them all before they rot as my only storage is our balcony and it is still supposed to be warm for the next while, except at night when it goes down to cold cellar temperatures.

I'm going to attempt yet another vegan brownie recipe ... this one.
I want to take them to my nephew's tomorrow, as I'm going to visit for the day.

They'll be good. Brownies are probably the number one thing I like with eggs so much better. My favorite vegan version uses tofu. The worst one I tried had applesauce :yuck: . I despise applesauce in anything chocolate
 
I made a no knead wheat bread that I made another time, but changed up the shaping. I wanted to try it just as written, where you just dumped the dough in a hot Dutch oven without shaping or second rise. It rose beautifully after 18 hours, but when I dumped it out I found liquid at the bottom of the bowl. It wasn't sticky though. Anyway, it baked kinda flat with a very chewy bottom crust, and stuck to the cornmeal coated parchment. My son likes it better than me. Now I should make a stew to have it with

I, too, do not like applesauce in anything chocolate. I actually don't like it, period, in baking. I haven't made the brownies yet, but I will in a bit.

other than putting it there yourself, how do you even know it is there? I use it as a replacement for oil in everything baked (just don't bake all that often)

I made a loaf of soft white bread… for hubby…in the bread machine since he doesn’t like sourdough.

I use applesauce for oil in many baked goods like banana bread, ginger, cranberry, nut, pumpkin and find the taste is very compatible. I tried using it in a brownie recipe, and then a chocolate cake, following the directions and didn't even want to eat them. I just dislike those tastes together--I absolutely taste the applesauce, but then I am that person who quesses the ingredient
