Pizza margarita at Purezza. They are my favourite. I also am craving Mr Whippy vegan ice cream. I've had none since last September.
I more meant using the word parmigiana since that's what I grew up using. Anything that we put mozzarella on we called parmigiana. When I make eggplant parm I use both mozzarella and Parmesan cheeses. And there it goes, capitalizing the p again lol.It's not the same cheese.
Google has conflicting information. Some say eggplant is made with Parmesan and others say Mozzarella. Then you have the debate as to where it all originated. I just want it in my mouth/stomach lol.
It's usually made with ricotta, mozzarella and parmigiano. I make it with whatever plant based cheeze I have as there isn't much choice over here.

I use (tofu)ricotta occasionally. I love eggplant! I will eat some right from the fry pan when they are nice and crispy. So good.
