I more meant using the word parmigiana since that's what I grew up using. Anything that we put mozzarella on we called parmigiana. When I make eggplant parm I use both mozzarella and Parmesan cheeses. And there it goes, capitalizing the p again lol.It's not the same cheese.![]()
Google has conflicting information. Some say eggplant is made with Parmesan and others say Mozzarella. Then you have the debate as to where it all originated. I just want it in my mouth/stomach lol.

I use (tofu)ricotta occasionally. I love eggplant! I will eat some right from the fry pan when they are nice and crispy. So good.It's usually made with ricotta, mozzarella and parmigiano. I make it with whatever plant based cheeze I have as there isn't much choice over here.
