What are you craving?

It's not the same cheese. o_O
I more meant using the word parmigiana since that's what I grew up using. Anything that we put mozzarella on we called parmigiana. When I make eggplant parm I use both mozzarella and Parmesan cheeses. And there it goes, capitalizing the p again lol.

Google has conflicting information. Some say eggplant is made with Parmesan and others say Mozzarella. Then you have the debate as to where it all originated. I just want it in my mouth/stomach lol.

It's usually made with ricotta, mozzarella and parmigiano. I make it with whatever plant based cheeze I have as there isn't much choice over here.

I use (tofu)ricotta occasionally. I love eggplant! I will eat some right from the fry pan when they are nice and crispy. So good.

I'm craving pesto pasta with maybe some vegan feta, tomatoes, onions, arugula and fresh basil. And fruit. I had a nice mango the other day. It was so delicious.

It really does depend. I've only ever had artisan vegan cheeze that tastes just as good. The supermarket stuff tastes either bland or vile.
Well, never bought it from supermarkets, only as vegan cheese garlic bread from pizza shop… definitely tastier
