Vegan Roasted New Potatoes with Herbs

1 lb. small red and/or white potatoes, scrubbed
1 TBS herbs de Provonce,plus a little extra for garnish
3 cloves minced garlic
1/4 c. olive oil,plus a little extra for drizzling
salt and pepper

Preheat oven to 400 degrees;
In a large bowl,combine minced garlic,olive oil,and herbs,mix well;
add potatoes and toss to coat well;
sprinkle generously with salt and pepper;
transfer to large baking dish or cookie sheet;
space potatoes evenly apart;
roast till tender,about 1 hr.,checking and stirring occasionally;
transfer to a large platter ,drizzle with olive oil and sprinkle on extra herbs;
serve warm.

Simple and crazy delicious. To shorten cooking time,cut potatoes in half.
