Vegan Maple Roasted Parsnips

500 g parsnips,peeled,cut into strips, parboiled for 1 minute and drained.
2 tbs maple syrup
1-2 tbs olive oil
salt & freshly ground pepper

Toss the parsnip strips with the olive oil, 1 tbs of maple syrup and salt & pepper.
Place into a large baking dish and roast in oven 190 -200 °C for approx 20 mins.
Drizzle over the parsnips the remaining maple syrup and continue to roast for
another 5 - 10 mins until the parsnips are golden brown.
Sprinkle with some Maldon sea salt.

Tip : You can also add a few sprigs of thyme before roasting. Golden syrup may be substituted for
maple syrup. A sprinkle of dried chilli flakes will add some zing to the parsnips.
