- 3 green apples thinly sliced ( I do not peel mine)
- 1 cup carrot grated
- Juice of one lemon
- 1 TBS lemon zest
- 1 cup sultana
- 3/4 cup of oil
- 3/4 cup fine sugar ( I use brown which I grind down)
- 1 tsp vanilla essence
- 1 1/2 cups gluten free self raising flour ( if using plainéwheat flour add 1 tsp baking powder)
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup vegan cream cheese
- 1 cup icing sugar
- 2-4 drops lemon essence
- water if needed to thin the icing
- Lemon peel grated for garnish
- Prepare a greased loaf pan and put the oven at 200 c
- Coat the sliced apples with the lemon juice and allow to sit
- Add the carrot, sultanas and lemon zest and stir again
- Blend the oil and sugar until creamy
- Add the vanilla essence and blend again
- Put the flour in a bowl with the cinnamon and salt and mix
- Add the apple/carrot mixture to the flour and stir to coat all of the fruit with the batter
- This will be a thick mixture and may seem over taken by fruit and veggies. This is fine
- Tip into the prepared pan and allow to cook for 30-45 minutes.
- Mix the icing sugar and cream cheese together until thick and blended
- Add lemon essence and thin with water if needed
- When loaf is cooled and ready glaze with the prepared icing
