Kimchi is publicized to be healthier raw than cooked. You get all the probiotics, and no chance of vitamin depletion that can be associated with cooking (or overcooking).
However it might just be tastier and better integrated when cooked into a meal.
I used to mostly eat it raw, like lettuce. Recently I have been trying to add it at the end of cooking to see if I can get both benefits.
What do you think? Raw or cooked?

My understanding is that kim chi does lose its probiotic quality when cooked however does not lose its vitamin K2 benefits which are essential for bone health. Just last night i taught in the sauerkraut club i run the Korean Jigae and instead of cooking the kim chi in the soup we added it to the top like a garnish and then stirred it through - so effectively it wasn't cooked but heated through some . It was so delicious.
