Kimchi is publicized to be healthier raw than cooked. You get all the probiotics, and no chance of vitamin depletion that can be associated with cooking (or overcooking).
However it might just be tastier and better integrated when cooked into a meal.
I used to mostly eat it raw, like lettuce. Recently I have been trying to add it at the end of cooking to see if I can get both benefits.
