1 Onion, sliced
2 Celery stalks
Hand full of baby carrots
1 1/2 C. frozen corn or 1 can drained corn
2 small baby red potatoes, cut into chunks
1 large sweet potato, cut into chunks
2 Garlic Cloves, crushed
2 1/2 - 3 C. No Chicken broth or water w/ veggie buillon cube
1/4 C. Soy Sauce ( I used low sodium)
1/4 C. Apple Juice
1/2 teaspoon Oregano
1 t. Onion powder - Didn't really meaure I'm totally guessing on this one.
1 t. garlic powder- Didn't really meaure I'm totally guessing on this one
1/4-1/2 t. celery salt- Didn't really meaure I'm totally guessing on this one
3 T. cornstarch

**Most people mix cornstarch with about a half cup water and then add it to the stew but I just throw it right in the and stir it until it thickens. You can do it either way.

Combine all ingredients except the corn starch and the corn in crock pot and cook on high for 6 hours or low for 12. Add corn and corn starch a few minutes before serving and stir until it thickens.

Stovetop Directions: Combine all ingredients, except the corn starch, in a large pot. Bring to a boil, lower heat, cover and simmer about 1 1/2 hours until vegetables are tender. Add corn and corn starch a few minutes before serving and stir until it thickens.

** If using frozen corn make sure you give it enough time to cook properly. Who knows...you may even be able to add that at the very beginning I just wasn't sure how corn would do in the crockpot for so long so I threw it in right at the end and it was perfect.
