Vegan Gingerbread Cake

Ingredients:

4½ oz sunflower oil
4½ oz dark muscavado sugar (I just used white)
7 oz golden syrup
8 oz plain flour
4 tsp ginger
1 level tsp bicarbonate of soda
¼ pint soya milk
1 tbs vinegar

Method:

Preheat the oven to 180 C, 350 F, gas mark 4. Blend together the oil, sugar, and syrup. Add the rest of the ingredients, then mix thoroughly.

Bake for 1 to 1½ hours at the above temperature. Check after the first hour, and if not yet ready cover with foil to prevent burning.

Cool on a wire rack. Eat!

I made this today and it's really good! Lemon icing works well with it.
The picture is my one, the bottom crumbled off a bit but only because the tin was old :p
Edit: And it's upside down :fp: Sorry I don't know how to fix it...

I love gingerbread! That doesn't sound like much flour... what size pan?
 
Ooooooooh... now I get it!:argh:

I've never weighed flour-just scooped and leveled. When I saw "8 oz." i'm thinking one cup, but I knew that wasn't right!
Finally looked it up and sure enough- 8 oz. is TWO cups!

Yay! I love ginger cake and really want to make it (right)!
