Vegan Cranberry Salsa

1 bag fresh cranberries (12 oz)
3/4 c sugar , or 1/4 cup agave (or to taste for sweetness)
3/4 cup green onion, chopped
2 tbs jarred or one fresh finely chopped jalapeno
1/4 cup cilantro, chopped
2 tbs lime juice
1 tsp salt

Process cranberries till partially chopped;
add sweetener and pulse a few more times;
add remaining ingredients and pulse a bit till blended but not mushy.

Store in container overnight if possible (or at least two hours) to allow flavors to blend-it will taste pretty awful at first, but I promise your patience will be rewarded.

Pour over a plate of softened vegan cream cheese, Serve with crackers.
