Vegan Chili

Chili

1 T olive oil
1 C. finely chopped onion
1 C. chopped bell pepper
2 T. miced1 jalapeno
1 clove garlic, minced
1 can crushed tomatoes
1 can black beans or 2 cups fresh
1 can chickpeas or 2 cups fresh
1/2 cup corn
1/4 cup tomato paste
1 t. sugar
1 t. ground cumin
1/4 c. fresh basil or 1 t. dried
1 t. chili powder
1/4 t black pepper
sour cream (optional)
Shredded cheddar cheese (optional)
You can sautee onion peppers and garlic but I literally just throw everything in our crockpot and cook it for about 4 or 5 hours. You could make this in a stock pot on the stove too pretty quick but I would sautee veggies if you do that.
 
I always serve this with my sweet cornbread recipe. I'm posting that too ;)
 
Ooooo, I'm going to have to try this and the cornbread, too! I will just end up making it on the stove since I don't have a slow cooker, yet.
 
Rosie, i made this on the stove a couple weeks ago. If you do this make sure you cook it on the stove for a few hours. I made mine in like an hour or two and the flavors weren't as prominent as they usually are when I slow cook it all day. The consistency wasn't as Good either.
 
Just what I was looking for. I've been craving chili.
I posted a recipe for Sweet Cornbread too which goes really well with it. Although I guess my recipe is not REAL cornbread but it's still delicous. I'd rather not eat Real Cornbread anyhow since I'm about 1000% sure it'd have some type of animal fat in it. Southerners LOVE the lard!! Lol
