Vegan Cardamom Coconut Pudding

  1. 1 400 ml can of coconut milk
  2. 1/3 cup of fine brown sugar ( ground in a coffee grinder or caster sugar would work)
  3. 1/3 cup of fine, coarse semolina
  4. 1/2 tsp ground cinnamon
  5. 1/2 tsp ground cardamom
  6. 1/2 cup sultanas
Instructions
  1. Combine milk, sugar, semolina, cinnamon and cardamom in a saucepan.
  2. Bring to a boil and then simmer on medium heat stirring constantly.
  3. Add the sultanas and turn down to low
  4. Stir from time to time until the pudding thickens.
  5. Serve warm when the dessert is at your desired thickness

This is such a yummy dessert and definitely worth the no time it takes to make it.
