Whatcha Eatin?

Taking inspiration from @Emma JC 's cavalier attitude to porridge and pulses, I had my oats with plump raisins, lemon juice, brown sugar and... chickpeas. And we're talking the Bold Co jumbo ones here - which had to take centre stage as they're far too good to mash up and hide away.

today will have our beans on toast today with some of last night's smeat added to the beans - grapefruit sliced

Yeah it was pretty good, and although it won't replace peanut butter porridge anytime soon, it certainly felt more virtuous for the lower fat and higher protein. Well, at least it would have done if I didn't drizzle tahini over it :)

It's got me thinking if roasted crunchy chickpeas would work.

A salad; chickpeas, sliced fennel, grated white cabbage & carrots, multiseed croutons, plus Dijon vinaigrette and yeast flakes.

Strawberries with coconut milk, crumble plus sweetener.

Tahini does have protein, of course, but it does have a lot of fat too.
