Whatcha Eatin?

A salad; leftover brown basmati rice, spinach, diced peeled tomato, avocado, grated carrots, chicory, smoked diced tofu, vinaigrette and yeast flakes.

A few crisps.

I had a late lunch - the leftover "chicken" wings from the other night with sliced cucumber and marinated artichokes. White wine.

Leftover leek,cauliflower and lentil soup with added leftover basmati rice, a sprinkle of lemon pepper, yeast flakes plus a drizzle of evo.
A slice of smoked tofu.
Soya yogurt with added mango puree plus sweetener.

The potato wedges were so nice yesterday. Yum.

I am going to go for a walk to clear my head and then make a vegan bacon and tofu sandwich with ciabatta.

probably noodley soup as I have a bit of cabbage and kale left and it is cold outside so it will go down nicely, soy curls will add the protein and a drizzle of tahini will add the fat

I'm about to try some vegan chik'n nuggets that I got from Walmart, the Better Good brand. Not sure if that's Walmart's brand, but I figured I would give them a shot. I'm going to have them with a ranch dip that I made from silken tofu. I also will have a piece of toast with a little butter and some pesto on it.

The nuggets are pretty good texture-wise, but they could use a bit more flavoring in the batter. That said, I would get them again, as they can always be doctored up. I wanted to try them on their own first. Next time, I'll sprinkle some spices on them. They were decent with the ranch, though! And they were just under $5 for the box, which has three or four servings.

I had some leftover silken tofu from making the chocolate mousse, probably about half a cup. I added some vegan mayo, just a couple of spoonfuls, garlic powder, onion powder, dill, lemon juice, vinegar and a pinch of salt. I sort of played around with the flavor until I got it tangy and whatnot. It's pretty tasty. I kind of wing it every time I make it. Then I just use a hand mixer to blend it up. It definitely tastes better after it chills in the fridge for a couple of hours. It was great the next day.
