Whatcha Eatin?

I let the kale go bad :fp:

I have a suggestion for you regarding the kale - I keep it in the bag that I bring it home in and I put a paper towel on both side before I put it in the fridge - when I use some I turn the paper towels so that the dryer side is further in the bag and the moisture wicks away and it stays good for a long time - I do the same with those mixed salad containers and when I buy a big bag of spinach I saved some of the containers and relocate the spinach into them and put a paper towel across, with the edges sticking out, and so can make a $2 bag of spinach last a couple of weeks (unless I eat it quicker).

Today we discussed have heart shaped pancakes however it is noodley soup day and I do not wish to give it up - maybe tomorrow instead.

I've had three heart-shaped sugar cookies already, and I'm not even done baking them yet, lol. I'm going to freeze most of them for a retirement party I'm going to in a couple of weeks, otherwise, they won't last a week!

I just had a soy curls chik'n salad sandwich on homemade bread with sides of sliced cucumbers and pineapple chunks.

The soy curl curry was surpisingly good, and so easy. I was able to just add the dry soy curls to coconut milk and a big can of crushed tomatoes, curry powder and powder ginger and veggies. I didn't get any of the weird taste that makes me soak and rinse when I cook stovetop

I had brunch at a Swedish vegan cafe in London. Scrambled tofu, tomato, baked beans, sausages, garlic potatoes and sourdough toast. I had a mimosa with my meal too.

I had tofu scramble on wholemeal toast for breakfast, two clementines as snacks and I just made air fried potato wedges. I had some of the Swedish mustard I bought at the cafe yesterday with the wedges. Yum.
