I made a veggie curry with carrots, broccoli, onion and sweetcorn. I wouldn't normally put sweetcorn in a curry, but I have a big bag of corn in the freezer.
Oatmeal banana bake with a drizzle of maple syrup and an orange.
Crispy cauliflower steaks, only I don’t bother trying to cut into steaks because you only get two then the rest of the cauliflower crumbles. So I just cut it from the get go and do it that way. It’s tastes exactly the same.
The only downside is that I could eat the entire cauliflower in one sitting.
But I don’t…I force myself to at least have it for two days. If it was just the cauliflower I wouldn’t care but it is brushed with oil. I measured to see the least amount that I could use and still have it be good and it’s two tablespoons. So I’m getting a tablespoon of olive oil in a serving. I feel like it's a lot. It certainly can’t help my calorie intake. But whatever. It’s so good. I’m not going to stop making it, lol.

Mashed potato and cooked cabbage leftovers are mixed together and fried. Delicious!
