Whatcha Eatin?

I made a salad...with three cups of mixed greens and veggies lol. I just couldn't do this every day. 😁
It's really good though.

I'm pretty sure I could do two cups of veggies daily (I pretty much do that now), but I don't know about three because I like to have room for other things. :D That said, a big salad does the trick for three or four cups of veggies.

When I have a good salad I'll easily make about 3 cups veg, but usually I need to try. When my kids were small and my mother lived with us I'd make a bag of frozen veg with almost every dinner. She thought that was too much. 🙄
I spent too much time making too little food it seems. Matcha and cashew thing, some with oats made into snack balls, the rest in the freezer. I kinda lost my touch at making those snack balls :shrug:.Got a great deal on blueberries and strawberries, so made a blueberry buckle
Made strawberry chia jam I'll have with yogurt
 
yesterday we had breakfast beans in a bowl with onion/jalapeno and spices and a bagel with Just Egg, cheez shreds and pickled jalapeno

today will be noodley soup as I still have some kale and lots of froz veggies, soy curls etc

Chickpea salad on saltines. I so need to make bread. :D
I want bread too, but not enough to run the oven. I kinda wish I'd gone to Aldi and just got some sub rolls. I've been craving a big sandwich.
I also want deli type seitan and mayo, both I'd need to make 🙄

I did make matcha, cashew, seedy, oat bran mix I spread in a silicone mold and froze. I was disappointed it was so sticky, so I added oats to half the mix and made balls. The frozen mix turned out really tasty! I added vanilla and it was very noticeable
