I am going to keep it simple this morning, maybe more cereal with berries , as my honey is driving home today and so will appreciate having our usual breakfast bean on toast brunch tonight for dinner.
A very late breakfast as I had an early appointment in town this morning; ww multiseed baguette with Flora, Dijon mustard and thinly sliced vegan deli.
A berry infusion.
A slice of soft, chewy sourdough with Tofutti cream cheese and seedless blackberry jam. Plus a deliciously steaming hot cup of sweet tea with a splash of Silk creamer.
We ended up getting a Mexican takeaway as I couldn't be bothered to go out in the cold to buy the cream cheese and I felt ill afterwards. I'm paranoid they used dairy cheese even though it was marked vegan.
I am having a Kimchi noodle soup that I bought at the dollar store - I took out the noodles that came with it and put in two other ramen noodles, added a few frozen veggies and some soy curls - it is very spicy.
I had elbow macaroni with canned kidney beans, tomato sauce, and a bit of canola oil for late lunch/early dinner. Simple, but quite good.
I cooked the elbows in my slow cooker: I heated up the water to a simmer and then added the macaroni- otherwise the elbows would have been VERY overcooked and mushy. I drained them, added the beans and sauce to about half of them, and put the rest in the fridge after they had cooled.
