What did you Cook or Bake Today?

I buy white chocolate and butterscotch chips from Amazon. They're not great on their own but in cookies they are good!
I'm not about to buy these, but one day would buy cocoa butter and try this-

The oatmeal scotchies cookies recipe from the butterscotch chips bag were my most favorite cookies! The chips were disgusting on their own, but in the cookies were delicious! I have a bottle of rum extract, maybe play with that
 
Now I'm wanting to buy cocoa butter 🙄
I just bought another bag of sprouted oats at Costco so I need to start using them more than just breakfast :laughing:.
I'll add a drop of rum extract to cookies thinking maybe that might be butterscotchy? Or brown the butter? Does plant based butter brown? I have Country Crock sticks

I made tempeh bacon using the Minimalist Baker's recipe. It was pretty tasty, but I want more kick/salt or something, so I will tweak the spices. The flavor was very good, though. It was great on the mung bean just egg sandwich. I'm going to use it for salads and for a vegan BLT.

I think the other tweak I might do is to cook it longer, as it didn't crisp up. The slices were probably too thick as well, but tempeh is sometimes crumbly, so I didn't want to try to slice it super thin. I made them about 1/4 to 1/3 of an inch thick. The recipe calls for baking at 400 F for 20 minutes, flipping after 10 minutes and brushing the pieces with the leftover marinade. I might try 30 minutes next time to see if that makes a difference. All that said, I will make it again because it was very tasty. Also, I marinated the pieces for 30 minutes, rather than the 10-15 minutes called for in the recipe.
 
I made tempeh for my very favorite sandwich--the Reuben!
I just use 3 caps liquid smoke, a tsp brown sugar, poultry seasoning, dash cayenne, 3 caps vegan worchestire, and 3 packets soy sauce to the slices and half cover with water and let sit a few hours. I brown in a little oil on both sides then add marinade, about 3-4 min each side till absorbed
I never felt it the right texture for bacon. Actually the only bac'n I've liked is the imitation pieces
 
And I made another cheese with soy yogurt and cashews. Different every time, but never disappoints! :yum
I do like it better if cultured a couple days, which I didn't do this time, so it's really mellow, but super creamy
 
Pasta? I never see you making a hot pasta dish! :)
LOL, I do make some hot pasta dishes, like American chop suey, or spaghetti with garlic and olive oil, but I confess to liking a lot of cold or room-temp pasta dishes, like pasta salads, pesto pasta and spicy peanut noodles. The last two I have eaten both hot and cold. :D

I do remember the pasta salads and occasionally the pesto pasta. It's only because all of your meals sound nice and I remember them.

I also don't know what to make tonight; curry, pasta or something else?

Just put a chocolate cake in the oven. I made this one--which is really the same as absurdly easy, just an 8x8 pan-
I decided to try with 'cake flour' - sifted the flour with 2 Tbls corn starch. I've never seen that called for in vegan recipes, but I'll let you know if I see a difference. I also used half brown sugar
Naturally I goofed up--I lined the pan with parchment but I poured the batter in and it went in the pan :ignore:. I was even thinking of omitting it because it;s a non stick pan anyway. Oh well, I wasted parchment for nothing

I was all ready to buy cocoa butter and make my own, but that looks way more expensive than buying those chips! 🙄
I was also looking into buying wheat berries and a mill--that looks more expensive too!

I've had such sweet cravings-this pudding certainly should cure them! It takes babysitting, but so worth it!
I used 1/3 cup for the 6 Tbls. Hate when they make things more difficult ----and a stainless steel pan, no need for non stick

I'm going to make a few things today: apple pie with filling from the freezer, seitan sausages, oatmeal energy bites and soy curls chik'n salad.

OK, so I did three out of four. :D I just finished the last batch of seitan sausages. I made a dozen. :) I didn't make the soy curls salad, but I may do that tomorrow. I was delayed after I discovered that i had no fennel seeds for the sausages, so I had to make a quick trip to the store.
