What Did You Cook or Bake today?

I've baked the sugar cookies (they are delicious -- I had to test them, hehe), and next up are Russian teacakes (the wedding cake cookies). The vegan butter is on the counter softening. I think tomorrow I will make oatmeal raisin cookies and possibly peanut butter cookies.
 
I haven't made the peanut butter cookies, but I did make molasses crinkles and the oatmeal raisin cookies. I want to eat them aaaaallll. :D

Ugh. I love to make mayo using soymilk--even the one with some thickeners and a bit sweet is great. I've seen recipes using aquafaba instead of soymilk, using same recipe. Well, I opened a can yesterday so saved the liquid--organic, low salt, nice and thick. What I imagined happened. It's awful. It used more oil, looks like it's gonna thin out as it sits, and doesn't taste like mayo. I can use it for sauces, but not the whole dang jar :fp:
Such a dang obsession with chickpeas on so many veg sites. I hate aquafaba
 
I made another loaf of sourdough. I like to cut the loaves in half and freeze them so that I always have some when I don't feel like baking.
Do you enjoy maintaining your starter? I've tried and just don't like the process, but I do like sourdough.
I didn't like thinking about what to do with the discards. Kinda like when I made soy milk and got sick of okara!
 
I have shortbread cookies in the oven. I will get to the peanut butter cookies. :D

ETA: I made the peanut butter cookies. I tried a new recipe, as the one I always veganize has great flavor, but they are dry and sometimes crumble a lot. So instead, I used this recipe from Nora Cooks, and they came out wonderful. They have more chew to them than I'm used to, but they are holding together nicely. And this made two dozen cookies, which was perfect. My old recipe made about 5 dozen, which is way more than I need. Happy, happy.

I just recently reduced my starter to a small amount and I'm keeping it in the refrigerator. That way I don't have to feed it every day, I can take it out a day or two before I want to bake, feed it, and then put it back in the fridge when I'm done baking. I have been able to let it go two weeks in the refrigerator with no feeding and it has been fine. Some people go months and are able to revive it.

For all of the "rules" sourdough does seem to be quite forgiving. I know some people have success with using the starter straight from the fridge and they are baking beautiful loaves of bread. I have not tried that yet.

I like chewy cookies… I may try this recipe.

The recipe called for rolling them in sugar, but I did not do that. I think they are sweet enough with a whole cup of sugar in the recipe, lol. Also, I used a small ice cream scoop (a tablespoon size) to drop them onto the cookie sheet. I like my peanut butter cookies to have a rustic look, though I did do the criss-cross design on them.

I have an apple pie in the oven. I made enough crust for two pies because I'll be making one for Christmas dinner at my sister's. :)
 
Is somethimg "off" with my tastebuds? I've never tried to make sourdough bread, but I've eaten it, and to me it tastes like... bread.
I've had some that don't taste much different from an Italian loaf, but mostly I get a distinctly "cultured" taste.
Do you shop Aldi? They have a round sourdough I like--it's not a strong taste, but I do get sourdough flavor and good texture

I have a nut roll about to go in the oven. 🤞.
I only make once a year and don't have a regular recipe, just wing it with a sweet dough and ground walnuts
After obsessing about using soy yogurt in the dough I found we have two cartons of eggs with expire dates in two weeks. I used two eggs because my sons are kinda firm on their dates and don't use them much. In fact my one that bakes usually makes vegan cookies by default :shrug:
 
yesterday I made the 'tofurkey' that is stuffed - not sure I did it correctly as the mixture seemed a bit too dry so I hope it doesn't fall apart in the oven - I made a lot of stuffing so it will be quite large - steamed it for an hour and then put it outside to cool and then in the fridge - when I cook it tomorrow I am going to us "it doesn't taste like chicken"s suggestion and put rice paper dipped in melted butter/spices on the outside to make it crackly - this is my first time using vital wheat gluten...

I also made my favourite Lemon Berry Pancake Bars and put them in the fridge so I can just toss them in the oven to reheat tomorrow morning, for breakfast.

It feels so good to be ahead of the curve.

thank you for asking - it was just okay, I would say - maybe slightly overcooked as it was a bit rubbery and hard to slice - had potatoes and carrots as sides with gravy on everything and so basically it was just an excuse to eat gravy...

So the vegan pepperoni I made came out just OK. It has a bit of that gluten flavor that I don’t really care for. Also, it needs more kick. I think I would add pepper flakes in addition to the cayenne pepper.

The texture is just OK, too. A bit too chewy. I think it needs a little more liquid and maybe a teaspoon of vinegar to cut the gluten flavor. It slices nicely, though, which is good. I didn’t make the flatbread for the pizza, so I had it with hummus and crackers. I think a nice vegan cheese would go well with it.
