What Did You Cook or Bake today?

I have a pie pumpkin to bake and hoping to make a pumpkin roll up cake. I think there's a name for them--a sheet cake rolled up with filling?
What filling though? I'm thinking a thick pudding?

I'm interested to know how this goes. I haven't had luck with a vegan recipe for a cake I can successfully roll.

I would want a cream cheese filling but a light version, maybe one with cream mixed in. 🤔

Hmmm, now that you mention it, I didn't have luck with a vegan cake rolling. I used to make pumpkin rolls every year with egg, but only one time vegan, and it did not cooperate. I did the same--the power sugar coated tea towel, rolled up while warm. Unrolling it cracked apart. I don't remember the recipe
I also tried this one and again, not good Vegan Vanilla Swiss Roll with Jam - Gourmandelle
Look at that picture though! That is just what I want! I even have a jar of Aldi strawberry jam to fill it with. Aldi jam (preserves?) is very good. A bit too sweet, but I use it for like desserts. No corn syrup

I found this explanation that sounds quite good. First time finding this vegan site and when I come up with a filling idea, I'll try this!

we are doing a black bean cooking test today - both crock pot and instant pot - I soaked the crock pot ones over night and they are now on low and will not soak the instant pot ones and see how that turns out - I am a tad concerned about the actual beans as my honey bought them and they are cheaper and have tons of split ones in the package... will report back tomorrow

@Emma JC So long as you cleaned the beans off- i.e. made sure there were no potentially-tooth-breaking pebbles hiding amongst them- I don't think having a lot of split beans will be a problem. If anything, the split ones might be able to soak up the cooking water more efficiently and cook a bit faster.

Black beans are iffy for me. I do them in IP, but I'm betting slow cooker will win. I'm just lazy with beans. I don't even soak, I usually do like half time in IP, forgot about it, then check and add more time. Black beans usually always come out half super soft and half just right

I've got black beans and red kidney beans at 10 min in the IP. I'll add same amount of pintos and lentils for final cook with chili veggies. Making chili
 
I baked a pie pumpkin and blended some for this pumpkin cake. Didn't want to fuss trying a roll!
I followed the recipe except for spices, and used a 9x13 pan
I used 2 tsp ginger, 1/2 tsp nutmeg, 1/4 tsp each allspice and cardamom. I think I'll double the cardamom next time-I'm new to that
She is truly my favorite recipe site!
 
I made pie crust and used some to make a veggie pot pie, which I just put in the oven. Next up will be either mock crab cakes made with shredded zucchini or zucchini-banana-chocolate chip muffins. I'm going to put both zucchini makes in the freezer. If I have time, I will make scones. If not, I will make those Thursday, I think. Oh, and I prepped some soy curls for a vegan beef with broccoli dish. I actually don't have broccoli, but I mostly want to make the Asian sauce for the soy curls, which I plan to have tonight for dinner.

Well, not much different than usual… noodles, sweet potato, cauliflower, avocado, rainbow silverbeet, tomato, soya sauce and a dash of hot chilli sauce…
