Corn on the cob, but I know it's too early for that. I could buy non-local corn (it is at the grocery store), but that corn never tastes as good as the locally grown version. I'll just have to be patient.

My guess would be soft tofu, sugar, lemon juice, a bit of gram flour for firmness and a good dollop of aquafaba. I might experiment at the weekend.
