Up through the 1980's no one I knew but those of Asian descent and vegetarians ate tofu. In the 90's I started to see a change, maybe through the popularity of anime, but tofu was beginning to become a protein choice. I now find many people eat it. More people are eating meals that don't contain meat, whether processed or whole foods. I don't find people liking the name of the meat itself. Using the flavor, like plant based bac'n, sausage, burger are fine, they say the taste. Using 'chik'n, beef, ham, words that indicate the meat itself bring on the taunts of wanting to eat meat. No processed food tastes like flesh.
Most everyone I know likes food that is vegan, but do bristle at them being called flesh names. They really don't taste like meat, and while some can fool people if they're thinking it's meat and kinda hidden, it still gives the message they're trying to be meat and not just a good food on their own
It is frustrating to come up with names in English for plant foods.
