Yes, but consider this...if we label a vegan product as "chick'n strips", "duck seitan", "plant-based meatballs", it might also help carnists keep an open mind and switch away from real animal products. It could be a marketing tactic too. Seeing something labeled "chicken" might bring them more familiarity than something labeled "tofu strips". Something I've noticed is that when people hear "tofu", they automatically show an aversion and assume it's gross. So I think it boils down to the question of what's going to get the message across. I do see where you're coming from and how it can be problematic to label something as "chicken" for example, though.
